Blackberry and Elderflower Pimms Sorbet
I declare this a Pimms summer ( interspersed with the odd deluge of rain, as ever ).
A Pimmsie whimsy has arrived this year and its based on the Old No 6 Vodka cup.
Pimms used to be sold from 1-6 in the more swanky good old days. The most popular currently is the no 1 cup, served with all the trimmings and some sharp, icy cold, old-fashioned lemonade over here please!
I so glad I bought a couple of their premade tins before committing to a large bottle.
It’s a tad saccharin sweet for my taste and as such needed to be repourposed.
Into the ice cream machine it went, with some elderflower cordial to sharpen things up a bit. I also added a dash of St Germain Elderflower liqueur and about 20 large, well washed brambles from the garden. Commercial ones would be just fine I’m sure.
Still sweet I added the juice of half a lime and it balanced well
If the truth be told I found it became incredibly moorish, it’s a complete mystery is that it’s all disappeared!

Are those brambles in the picture? Like blackberries or like loganberries? I don’t think we have Pimm’s here. Boo. This sounds so fruity and refreshing!
I’ve never heard of any Pimm’s other than “No. 1”. I’ll hear to figure out how I can get ahold of some! That St. Germain is excellent. I use it in quite a few of my drinks.
