A frozen April Fool

Just to celebrate our wonderful cold Easter, (the coldest in the UK over the 50 years).

One of our maiden recipies for ice cream magazines blog, a more detailed recipe will follow shortly (well it  just had to be posted on April Fools day) .

A frozen fool, writer not withstanding.

A Parfait of Rhubarb Infused with Lemongrass. The parfait is simply an ingratiated custard made with an infused cream and not milk.

Can easily be made in advance. Remove from the freezer and then brulee the top with a blow torch or blisteringly hot grill to make the brûlée top.
